Health insurance available to students


College students are, given the environment, prone to accidents and sickness, but may not pay attention to their health insurance coverage.
Angela Campbell, of the Student Health Insurance Office, said Eastern’s health insurance program is largely beneficial for all Eastern students in different ways.

To be automatically enrolled in the student health insurance program, students have to be enrolled in nine or more on-campus hours.
“Anyone that fits that criteria is enrolled automatically,” Campbell said.
Students who are enrolled in six, seven or eight hours can purchase Eastern’s health insurance plan from the office.
“Those people who are part-time students can still take advantage of the plan,” she said.
“For students who want to be insured for fall and spring, the cost is less than $25 a month.”
Campbell said the fall and spring rates are $109.95 and the summer rate is $87.45.
“The nice thing about the plan is that there’s no network, so it covers students anywhere off campus,” she said. “Students can choose their own doctor and get care at home if they need to.”
Campbell said Eastern’s insurance plan is unique and differs from the plans offered at other area universities.
“We don’t require referrals, and it’s a very easy-to-use and accommodating plan,” she said.
She said many of the area schools she has read about have insurance plans that cost at least $300 per semester.
“They have different plans than we do, obviously, but for most things, our plan really meets the needs of our students,” she said.
Campbell said one of the most common things she hears is students saying they have other insurance plans so they cannot have the plan Eastern offers.
“That’s not true,” she said. “A good percentage of students carry both a primary and (Eastern’s student health insurance) as a secondary.”
Campbell said the recent changes in economy and health care have affected insurance nationwide.
“Because of the changes in health care, the deductibles go higher and higher now,” she said. “Typically, the student insurance will cover things like that.”
Campbell said that for students who may have a $5,000 deductible on their primary insurance, the student insurance could be handy and a lot more affordable.
“We tell many of our students that, oftentimes, it costs more not to have it than to have it,” she said.
Campbell used appendicitis and other unplanned and unpredictable illnesses as an example.
“It’s unexpected and out of the blue,” she said. “You could be talking about $15,000.”
Campbell said students who have both a primary insurance and a secondary insurance through Eastern can get more coverage and can take a deductible down further than if they only had a primary.
“It really is affordable insurance, and it makes a world of difference for so many students,” she said.
Campbell said the change in economy has affected students’ use of Eastern’s insurance.
“It used to be that almost all students had primary insurance, but we’ve seen that change,” she said. “Economic conditions exist now where more people are out of work and don’t have that.”
She said many students now have Eastern’s insurance because they cannot afford another type.
“It all depends on the family situation, but unless you live locally and have a local network, I think everyone should take advantage of it,” she said.

Orange Chicken Stir Fry


I watched Jamie Oliver's Food Revolution Friday night, and on there they had a single dad of 2 boys who took his family out to eat fast food at least once a day.
Jamie had the Dad go get fast food at a fast food place they usually went to while Jamie and the boys made dinner. It was a race to see who could get it done faster, and cheaper.

The Dad took 45 minutes and spent $30
Jamie and the boys took 30 minutes and spent $22. They made chicken with fresh tomato sauce on top, a really yummy looking shredded salad with homemade vinaigrette, and a yummy looking lime drink.

I guess that doesn't include the time it takes at the store, but most of us try to only go to the grocery store once a week.

I was about to take my kids to Arby's Sat, cuz my husband has been out of town for over a week, and the kids were restless, but then I remembered Jamie's great example of cooking a homemade meal, and I put myself to the challenge.

I put all 5 of my kids in aprons and put them to work. 28 minutes later we had rice (white cuz we were doing it fast), with orange ginger chicken stir fry. My kids LOVED it. Not all of them ate every single veggie, but they tried eat one and they all at least liked one of them. I think the whole meal cost me about $5, and we had left overs.

To make the meal extra special, we used chop sticks. Have you ever seen those chopstick holders for kids? We used those too.
We did have a pot and pan to clean up, and some plates, but as soon as we get some more paper plates, things will be great around here!

Orange Chicken Stir Fry

Brown or White rice cooked

About 3 chicken breasts diced up
1 bunch asparagus cut into 2 inch pieces
handful of broccoli
2 small zucchini cut into 1 inch slices
Minced ginger
soy sauce
orange juice

While the rice is cooking, add chicken and 1 Tablespoon oil (we used olive and sesame) to a pan. After chicken is browned up (3 minutes?) add asparagus. After a couple more minutes, add the broccoli, and after 2 more minutes add the zucchini. Add about 1/4 C water, 1 T soy sauce, and about 1-2 T. ginger. I like the minced ginger that they sell in a tube that you keep in the fridge. Then add about 1/4 Cup of orange juice and cook till everything is done and juice is sticky.

Here is a delicious snack or cereal... perfect for on the go!!! I am going to play with it a little more next time I make it. Might add some dates or dried fruits. 

and I will not over cook it!!! Yes, I over cooked this batch because baby needed me! :) It almost was a FLOP! :) 



The Ingredients:Dry
1/2 cup ground flax seeds
1 cup raw pumpkin seeds (pepitas)
1 cup raw sunflower seeds
1 1/2 cups almond meal
3 cups shredded unsweetened coconut
4 cups raw slivered almonds
1 tsp cinnamon
1 tsp sea salt
1/2 tsp baking soda
Wet
1 cup liquified coconut oil
1/2 cup raw organic honey
3 tsp pure vanilla extract


The Directions:

  1. Preheat oven to 250 degrees.
  2. Combine all dry ingredients in a large bowl. Mix well to ensure ingredients are evenly distributed.
  3. In a medium bowl, add wet ingredients and whisk together until well combined.
  4. Mix the wet ingredients thoroughly into the dry ingredients. 
  5. Divide the mixture in a thin layer onto two rimmed baking sheets. It will fill about 1 and 1/2 jelly roll pans.
  6. Press mixture down with your hands or the back of a large spoon.
  7. Bake until lightly toasted, approximately 1 hour. Remove pans from oven and gently stir the mixture with a large spoon. Carefully return warm pans to the oven and continue to cook for another 15 minutes.
  8. Remove from oven and stir in optional ingredients, if desired. Let the mixture cool completely in the pans. 
  9. To store, place a folded paper towel (to absorb any excess coconut oil) in the bottom of a lidded storage container. Add paleo crunch to container and cover. Enjoy plain or with coconut or almond milk.

Kale and Sweet Potato

Enjoying Healthy Foods is now
Sometimes meals are simple with simple ingredients! This is one of those meals. 

The Ingredients:
2 sweet potatoes, peeled and cubed
about 2 cups Kale, chopped
1 TBSP coconut oil
salt and pepper

The Directions:
Peel and cube sweet potatoes. Place in a glass dish lined with foil.  Melt Coconut Oil and pour over sweet potatoes. Add Salt and Pepper. Bake at 375 for 25 minutes. Take out and set aside. In a frying pan, add 1 TBSP coconut oil and melt. Add Kale and saute. After 5 minutes or once the Kale is wilted add the sweet potatoes. Allow sweet potatoes get some color (burnt on some of the edges).

We served this with ground beef. Simple again!
Browned ground beef and seasoned with Lemon Pepper and Garlic Powder. That is it!

Aromatherapists love palmarosa for its skin conditioning properties, and its calming, floral scent.
Therapeutic uses:
Acne, colds and flu, cuts, eczema, fatigue, fever, fungal infections (like athlete’s foot), intestinal infections, nervousness, physical exhaustion, scars, stress and stress-related conditions, tissue regeneration and wounds.
Essential Oil Applications:
For acne, eczema, and fungal infections, mix 2-3 drops in 1 ounce of carrier oil. Use a cotton ball and swab on affected area. Can also be used neat. (Essential oils are highly concentrated plant oils. Read and follow instructions for use carefully.)

To cool a fever, use 2-3 drops in a cold compress. Can also use 8-10 drops in bath.
For intestinal infections, use 3-5 drops in a steam inhalation.
To stimulate sebum production in dry or mature skin, use 2-3 drops in a carrier oil, and dab gently on skin. Can also be used neat. (Essential oils are highly concentrated plant oils. Read and follow instructions for use carefully.)
Mixes Well With:
Bergamot, cedarwood, clary sage, clove, geranium, ginger, grapefruit, jasmine, juniper, lavender, lemon, myrrh, orange, patchouli, rose, rosemary, sandalwood, tangerine, thyme and ylang ylang.
Extraction Method:
Steam or water distillation.
Parts Used:
Fresh or dried grass.
Safety Information:
No known contraindications, however it’s always best to use a patch test before using on skin.
